Question: Where can I find a ranking and rating of business and management journals?
Answer: Journal Rankings (all subjects)
There are two established sources of journal ranking data. The Journal Citation Reports (JCR) from Thomson Scientific (formerly ISI) and the journal rankings from Scopus (Elsevier).

Web of Knowledge provides access to Journal Citation Reports (JCR) (Thomson Scientific / ISI)
Select: Web of Knowledge, Additional Resources Tab, Journal Citation Reports, JCR Social Sciences Edition, and year
Look for a category (e.g Business, Economics, Management) or a specific journal (Journal of Marketing, MIS Quarterly)
JCR Online Training material

Scopus
Select Analytics tab for the journal analyser facility.
This shows citation information over several years.

The SCImago Journal and Country Rank portal provides an easy to use Journal Indicators facility based on Scopus data.

Publish or Perish is a free software program that uses Google Scholar as its data source.

Rankings for Business and Management journals

The UK Association of Business Schools produces an Academic Journal Quality Guide

The German Academic Association for Business Research produces an Official Journal Ranking (full paper) - journal ranking only

The FT has 45 Journals used in FT Research Rank of business schools. (This includes practitioner journals (e.g. Harvard Business Review) often omitted in citation-based rankings.)

Aston University Business School produces a Journal League Tables doc (latest versionJune 2009).

Journal Ranking (Bibliometrics) is well studied
